Chocolate Mud Cake in a Mug!



I've pinched this recipe from the Mathilda's Market blog...last week I tried it and it is DIVINE!!!
(the only secret is to measure properly)



5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour
3 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips 
A small splash of vanilla extract
1 large coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.

Pour in the milk and oil and mix well.



Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 2 1/2 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.


EAT!

THE cake!


Inspired by the recipe in the Women's Weekly, 
I made a double batch of Pink Velvet cake for Lolly's party on the weekend!
It took longer than the time specified to cook and crumbled and cracked a bit,
BUT once layered with the gorgeous cream cheese and marscarpone cheese icing, 
it was utter perfection!
Although it is essentially a chocolate cake coloured pink....
I think your eyes play tricks on you, as you would swear it tasted like lushious raspberries :)

Croquembouche

With so much going on here of late...
things I wanted to share have had to wait...
but no more!!
One of the special things we had at the Christening was this
to-die-for croquembouche from The Welsh Lady at Rosalie in Brisbane.
She has made many of our special occasion cakes over the years
and this one was outstanding - as they all are!!
The choux pastry was perfect and each ball was filled with
English custard and covered in caramelized sugar...
then pink roses, icing sugar and the gorgeous solid white chocolate name plate finished it off!
It tasted as beautiful as it looked too.

In the kitchen....

Today was a lovely day...I got to spend it at home, with a friend (a very talented crafty, baker, all-round clever clogs!!) who made lots of gorgeous sweets for me to photograph!
She is going to make them into greeting cards for our school fete and have the recipe on the back....and as you would..... we had to have spice cake for morning tea and cupcakes with lunch......such a hard life sometimes!!!
